Liffy's Peach Preserves
A vintage clipped recipe for Peach Preserves made simply with peaches, sugar, and water.

Ingredients
6
cups
sugar
(3 pounds)
6
pounds
small ripe peaches
(wash, do not peel or pit)
1/4
cup
water
Method
Pour sugar over peaches.
Pour water over sugar.
Simmer peaches 3 or 4 hours.
Strip to prevent sticking.
Peach pits will give preserves an almondlike flavor.
Remove from heat, skim with a metal spoon.
Pour into sterilized jars to within 1/2 inch of top.
Remove air bubbles with table knife.
Wipe jar mouth clean, adjust lids and process in boiling water bath 10 minutes.
