Ingredients
- 6 cups sugar (3 pounds)
- 6 pounds small ripe peaches (wash, do not peel or pit)
- 1/4 cup water
Method
- Pour sugar over peaches.
- Pour water over sugar.
- Simmer peaches 3 or 4 hours.
- Strip to prevent sticking.
- Peach pits will give preserves an almondlike flavor.
- Remove from heat, skim with a metal spoon.
- Pour into sterilized jars to within 1/2 inch of top.
- Remove air bubbles with table knife.
- Wipe jar mouth clean, adjust lids and process in boiling water bath 10 minutes.
