Ingredients

  • 6 cups sugar (3 pounds)
  • 6 pounds small ripe peaches (wash, do not peel or pit)
  • 1/4 cup water

Method

  • Pour sugar over peaches.
  • Pour water over sugar.
  • Simmer peaches 3 or 4 hours.
  • Strip to prevent sticking.
  • Peach pits will give preserves an almondlike flavor.
  • Remove from heat, skim with a metal spoon.
  • Pour into sterilized jars to within 1/2 inch of top.
  • Remove air bubbles with table knife.
  • Wipe jar mouth clean, adjust lids and process in boiling water bath 10 minutes.
