A vintage handwritten recipe for Chili Sauce made with tomatoes, chopped onions, green peppers, hot pepper, sugar, salt, mustard seed, celery seed, mixed spices, and vinegar.

- 1 gallon tomatoes
- 2 cups chopped onion
- 2 cups chopped green pepper (sweet)
- 1 pod hot pepper
- 2 cups sugar
- 3 tbsp salt
- 1 tbsp mustard seed
- 1 tbsp celery seed
- 3 tbsp mixed spices
- 2 1/2 cups vinegar
Scald, core, peel & chop red ripe tomatoes. Peel onions,remove seed from peppers chop & measure. (cook tomatoes - drain offsome of the juice, cuts csooking time.)
Mix all except spices and vinegar.
Boil 45 minutes.
Add Spices (tied in a bag). Boil until very thick. Addvinegar and sugar and boil until thick as wanted.
Taste & add more seasonings & sugar as wanted.
Can as desired.
