Hush Puppies

2 Cups Meal (Corn Meal)
1 Tablespoon Flour
1 Teaspoon Baking Powder
1 Teaspoon Salt
1/2 Teaspoon Baking Soda
3 Tablespoon Onions
1 Cup Buttermilk
1 Egg, Beaten

Combine dry ingredients and egg. Mix well. Stir all together & set aside.  This will rise up.  Do not stir anymore, use {a} teaspoon to dip out, do not overcrowd puppies when frying in deep fat where you fried the fish.  Dip your spoon in water now and then and the mixture will fall off better.  Cook until golden brown.

For two or three people, I use a little over {a} cup of self-rising meal. Put in 1 teaspoon Baking Soda, 1 Tablespoon Flour, 1 Egg beaten & nearly 3/4 Cup of Buttermilk add a good bit of onion.

Notes:
This is a recipe from my grandmother's friend, Lucy Montgomery. It appears in the middle of the recipe either Lucy or my grandmother gave alternate measurements to make a smaller batch. I have done my best to translate the recipe, please let me know if you think I have anything out of place. Again, I have done my best to transpose vintage recipes for today's use.
