Tomato Sauce

Tomato Sauce

2 tablespoons butter
1 small onion
2 tablespoons flour (lit brown)
2 cups tomatoes
2 cloves
1 bay leaf
1 spring parsley
1 teaspoon sugar
Salt & pepper to taste

Simmer 15 minutes, strain and add stock made from 1 cup of water and beef extract.  Add Worcestershire sauce if desired.

My guess is you saute the butter and onion, then add the flour until it turns to a light brown. Almost like a light roux. Then add the remaining ingredients and simmer for fifteen minutes.
