Virginia's Date Cake


1 cup boiling water
1 cup chopped dates
1 teaspoon baking soda

1 cup sugar
1 cup mayonnaise
2 tablespoons cocoa

2 cups flour
1 teaspoon vanilla


Pour 1 cup of boiling water over 1 cup of chopped dates and 1 teaspoon baking soda. 

Mix sugar, mayonnaise, and cocoa; pour into date mixture. Add 2 cups of flour, 1 teaspoon vanilla, and walnuts. 

Bake at 350-degrees for 45 minutes. 



This is a vintage recipe for a classic Date Cake, made with mayonnaise, flour, sugar, dates, and walnuts.  This is a perfect cake to serve for breakfast, a  light dessert, or an afternoon snack with milk or coffee.
