Ingredients
1/2 large loaf of bread
1/2 – 1 teaspoon sage
1 teaspoon salt
1/8 teaspoon pepper.
1 1/2 cup hot milk
Browned liver, gizzard, heart & 1 small onion
2 carrots
Whole chicken
Method
Grind bread (1/2 large loaf); add 1/2-1 teaspoon sage, 1 teaspoon salt, 3-4 dashes pepper (1/8 teaspoon). Mix 1 1/2 cup hot milk into bread mixture. Mix in browned liver, gizzard, heart, and 1 small onion.
Put 2 carrots in the neck and sew.
Stuff chicken with bread mixture and sew. Place wings behind the neck, tie legs. Butter chest of chicken. Butter the bottom of a roaster, put the chicken in a roaster and bake at 350-degrees. Put in oven uncovered 1/2-1 hour to brown. Cover and remain cooking for 1 1/2 hours until tender.
