Ingredients

2 cups chopped zucchini
1 cup chopped tomato
1/2 cup chopped onion
1/3 cup grated parmesan cheese
1 1/2 cups milk
3/4 cup Bisquick  baking mix
3 eggs
1/2 teaspoon salt
1/4 teaspoon pepper

Method

Heat oven to 400-degrees. Lightly grease a 10-inch pie plate. Sprinkle zucchini, tomato, onion, and cheese in pie plate. Beat remaining ingredients until smooth. Pour into pie plate. Bake until golden brown and a knife inserted in center comes out clean; about 30 minutes. 

Let stand for 5 minutes. Garnish with tomato and zucchini slices if desired. 

6 Servings.
