Ingredients

1 small onion, chopped
1 small apple, peeled and chopped
2 tablespoons butter
1 can cream of chicken soup
Salt to taste
2 teaspoons curry
2 cups cooked chicken or shrimp
3 avocados
Cooked rice
Paprika
Condiments

Method

Saute 1 small onion, chopped
1 small apple, peeled & chopped in
2 tablespoons butter

Stir in 1 can cream of chicken soup, 
salt to taste
2 teaspoons curry

Heat until smooth.  Add 2 cups cooked chicken or shrimp. 

Peel 6 ripe avocado halves.  Place 1 on a bed of rice, on each plate and fill with curry {mixture}.  Sprinkle with paprika. 

 

Notes:
Condiments: Raisins, crisp bacon, chopped nuts, green pepper, chutney, toasted coconut, kumquat.
