2 egg whites
1/4 teaspoon salt
3 cups sifted Jack Frost New 10-X Confectioner’s sugar
2 cups shredded coconut
1/2 teaspoon lemon extract
Few drops yellow food coloring
2 ounces semi-sweet chocolate, if desired


1. Beat egg whites, salt slightly. Add Jack Frost New 10-X Confectioner’s sugar gradually, beating until smooth. 

2. Add coconut and lemon extract. Mix well. Add food coloring to tint a pale yellow. Mix well. 

3. Shape with a teaspoon in peaks, on waxed paper sprinkled with Confectioner’s sugar.  Let stand 30 minutes. 

4. Melt chocolate over hot water. Drop a small amount of chocolate on top of each peak. Let stand until set. 

Makes about 30.
