1/2 cup ground pecans
1/3 cup bread crumbs
1/ teaspoon sage
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 cup flour
2 tablespoons water
4 large boneless chicken breasts
3 tablespoons oil
Combine pecans, bread crumbs, sage, salt, cayenne in wax paper. Place flour on another piece of wax paper. Beat egg and water together.
Coat chicken with egg, then flour, then pecan mix.
Cook chicken breast in oil for 3-4 minutes per side, until golden brown.
