Stella's Coffee Cake

Stella'a Coffee Cake, a vintage handwritten recipe card


1 package yellow cake mix
1 small package instant vanilla pudding
4 eggs
1 teaspoon vanilla
3/4 cup water
2/3 cup oil


1/2 cup white sugar
1/2 cup chopped nuts
2 teaspoon cinnamon 



Beat together cake ingredients on high. 

Pour 1/2 batter into 15x11x3 or 13x9 loaf pan.  Add 1/2 topping (sprinkled over bottom). Add rest of batter and sprinkle with the balance of topping. 

Bake at 325-degrees for 35 minutes. 

Cool 10 minutes, drizzle powdered sugar icing over the top. Add almond flavoring to icing if desired. 


Powdered Sugar Icing - 1.5 cups confectioner's sugar, 3 to 4 tablespoons milk or water, 2 teaspoons almond (or vanilla) flavoring if desired. 


Coffee Cake

An additional recipe for Coffee Cake was included in the collection.  This recipe is for a coffee cake with pineapple and bananas added. 

The notes say that 1/2 is plenty for a small cake, a whole recipe for "lots of people".

3 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
2 cups sugar
1 teaspoon salt
1 1/2 cups cooking oil
2 teaspoon vanilla
3 eggs, slightly beaten
1 8-ounce can crushed pineapple & juice
2 cups diced ripe bananas
1 cup chopped nuts


Grease and flour a 9x13-inch pan. Sift dry ingredients into a bowl. Add oil, vanilla, eggs, and pineapple. Stir together well. Fold in bananas and nuts. 

Bake at 350-degrees for 1 hour and 20 minutes or until center is done.
