Ingredients

1/2 cup brown sugar
1/3 cup margarine, melted
1 egg
1/2 teaspoon vanilla
3/4 cup carrots, shredded
1 cup whole wheat flour
1 teaspoon baking powder
1/2 cup oatmeal
1/4 cup wheat germ
1/2 cup raisins

Method

In a small bowl, cream together sugar, margarine, egg, and vanilla until light and fluffy. Add carrots and mix well. 

In another bowl, thoroughly stir together flour, baking powder, oatmeal, and wheat germ. Stir the dry ingredients into the creamed mixture; fold in the raisins. 

Pour mixture into a vegetable-oil sprayed 9x9x2-inch pan. Bake at 350-degrees for 30 minutes. Let cool. Cut into bars or squares. 

Yeild: 25 bars, 70 calories per bar.
