Ingredients
1 cup sugar
3 heaping tablespoons cornstarch
Pinch of salt
2 cups water
1/2 cup vinegar
3 egg yolks
2 tablespoons butter
Pie shell
Meringue, optional
Method
Mix together 1 cups sugar, 3 heaping tablespoons cornstarch, and a pinch of salt; add 2 cups water and 1/2 cup vinegar and boil until clear.
To 3 egg yolks, slightly beaten add a little of the boiling mixture stirring constantly, then return to vinegar mixture and cook 2 or 3 minutes. Add 2 tablespoons butter and pour into baked pie shell when cool. Meringue optional.
