Infallible Hollandaise Sauce

Infallible Hollandaise Sauce


3/4 cup water
Juice of 1 lemon
1 level teaspoon cornstarch
2 egg yolks
2 tablespoons butter


Heat water, lemon, and thicken with cornstarch.  Slowly add thickened mixture to beaten egg.  Add butter.  Put on stove and heat over hot water. 


Serves 4
