Sauce Padua


2 tablespoons butter
1/2 cup shredded cheddar or process American cheese
1 cup medium cream sour cream
1 teaspoon prepared mustard
1/2 teaspoon freshly grated horseradish
1 hard-cooked, chopped egg
1 1/2 tablespoon dry sherry


Melt 2 tablespoons butter, stir in 1/2 cup shredded Cheddar or American cheese, when melted add 1 cup medium cream sour cream.  When about to be served, add 1 teaspoon prepared mustard, 1/2 teaspoon freshly-grated horseradish, 1 hard-cooked chopped egg.  Add very slowly, stirring 1 1/2 tablespoon dry sherry.
