Mexican Chicken with Rotel an Dorito Chips

Ingredients

1 chicken
Garlic salt
Red pepper, optional
1 large onion
1/2 pound shredded Velveeta Cheese
1 large bag Taco Flavored Dorito Chips, divided
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Rotel tomatoes with chilies

Method

Boil and bone 1 chicken, place in a large casserole dish, and sprinkle with garlic salt and red pepper (optional). Dice 1 large onion and add to the above. Next, add 1/2 pound shredded Velveeta Cheese. Crush 1/2 of a large back of Taco Flavored Dorito Chips and sprinkle over the other ingredients. 

Mix 1 can cream of mushroom soup and 1 can cream of chicken soup. Put 1 can of Rotel tomatoes with chilies in the blender to chop the tomatoes. Pour the soup and tomatoes over the ingredients already in the casserole dish and mix lightly. Crush the rest of the Dorito Chips and sprinkle over the top. 

Bake at 400-degrees for 45 minutes.
