Mexican Chicken

Ingredients

1 chicken, cut into parts
2/3 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup cooking oil
1 cup orange juice
1 cup white wine
1/2 cup crushed pineapple – drained
1/2 cup raisins
1/2 cup ground almonds
1 tablespoon sugar
1/2 teaspoon cloves, ground

Method

Dredge chicken in flour, salt, and pepper – heat oil to medium temperature. Cook chicken 10 minutes until brown on all sides. 

Mix remaining ingredients in a bow. Place chicken in a baking pan – pour orange juice mixture over – bake 325-degrees for 30 minutes, baste and increase the temperature to 350-degrees and bake 20 minutes more.
