Plum Crisp

Ingredients

3 pounds purple plumbs (fresh Italian Prunes, 6 cups)
1 1/4 cups sugar
1 1/4 cups all-purpose flour
1/4 pound – stick of butter
1/4 teaspoon salt

Method

Quarter plums and pit.  In a small bowl stir together 3/4 cup of the sugar and 1/4 cup flour, toss with plums.  Turn into a 1.5-quart shallow baking dish, about 10x8x2 – inches. 

In a medium bowl stir together remaining 1/2 cup sugar and 1 cup flour; with a pastry blender cut in butter until fine.  Sprinkle over plum mixture.  Bake in a pre-heated 375-degree oven until plums are soft and topping is brown, about 1 hour.  

Serve with yogurt, whipped cream cheese, whipped cream or whatever.
