2 eggs, lightly beaten
2 1/2 cups milk
1/3 cup sugar
1/2 teaspoon grated lemon peel
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup raisins
2/3 cup packaged pre-cooked rice
Nutmeg or cinnamon


Combine all ingredients except spice in a greased 1.5-quart casserole and mix well. Dust top with nutmeg or cinnamon.

Set casserole in a baking pan and pur about an inch of hot water in pan. Bake in a moderate oven (350-degrees) for 40 minutes or until knife comes clean. Remove casserole and stir pudding.
