Cinnamon-Apple Salad

A vintage recipe for Cinnamon-Apple Salad made by boiling peeled, cored apples in water with red cinnamon candies, place cooked apples on a bed of lettuce and fill apple core with a mixture of cream cheese, milk, lemon juice, dates, pineapple, and walnuts.
Cinnamon-Apple Salad


6 tart apples
3/4 cup red cinnamon candies
2 cups water
1 3-ounce package cream cheese
2 tablespoons milk
1 teaspoon lemon juice
1/3 cup pitted dates, cut up
1 9-ounce can (1 cup) pineapple tidbits
2 teaspoons chopped walnuts


Pare and core apples. Cook candies in water until dissolved. Add apples and cook slowly, uncovered until just tender, about 15 to 20 minutes. Turn once during cooking. Chill in syrup several hours, turn once while chilling. 

Blend cream cheese, milk, and lemon juice. Add dates, pineapple & nuts. 

Drain apples and place atop salad greens, stuff centers with cheese mixture.
