Jell-O Rhubarb Pie

A handwritten vintage recipe for a Jell-O Rhubarb Pie; make this Rhubarb Pie with rhubarb, sugar, strawberry Jell-O, cornstarch, and egg. Place ingredients and in a double pie crust, sprinkle sugar on top, and bake for one hour at 400-degrees.
Jell-O Rhubarb Pie


3 cups diced rhubarb
2 cups sugar
1 3-ounce package strawberry Jell-O
3 tablespoons cornstarch
1 egg, beaten
Little red food coloring if rhubarb is not red


Mix all together.  Makes 1-2 crust pie.  Sprinkle with sugar on top. 

Bake 400-degrees, about 1 hour. 

I find it doesn't take an hour.  Make and enjoy!
