Banana Carrot Cake

  • 1/2 cup butter or margarine
  • 3/4 cup light brown sugar firmly packed
  • 2 eggs
  • 2 cups unsifted all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup mashed ripe bananas 3 medium sized
  • 1 cup grated carrot
  • 1/2 cup dark raisins
  • Confectioner’s sugar


  • Grease a 9-inch square baking pan; set aside.
  • In a large bowl, cream butter with sugar until light and fluffy.
  • Beat in eggs. In a small bowl, mix together flour, baking soda, baking powder, cinnamon, and salt.
  • Blend in flour mixture alternately with mashed bananas beginning and ending with dry ingredients.
  • Fold in carrot and raisins.
  • Turn into the prepared baking pan.
  • Bake in a 350-degree oven 45 minutes or until a cake tester inserted in {cake comes out clean.}
