Banana Carrot Cake

Ingredients
- 1/2 cup butter or margarine
- 3/4 cup light brown sugar firmly packed
- 2 eggs
- 2 cups unsifted all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup mashed ripe bananas 3 medium sized
- 1 cup grated carrot
- 1/2 cup dark raisins
- Confectioner’s sugar
Method
- Grease a 9-inch square baking pan; set aside.
- In a large bowl, cream butter with sugar until light and fluffy.
- Beat in eggs. In a small bowl, mix together flour, baking soda, baking powder, cinnamon, and salt.
- Blend in flour mixture alternately with mashed bananas beginning and ending with dry ingredients.
- Fold in carrot and raisins.
- Turn into the prepared baking pan.
- Bake in a 350-degree oven 45 minutes or until a cake tester inserted in {cake comes out clean.}
