Sawdust Salad

Sawdust Salad
A classic Southern vintage congealed salad recipe, that be used as either a sweet side salad or a light dessert for a heavy meal. This recipe calls for lemon and orange Jell-O, but you could use almost any citrus flavor.  Other recipes use grated cheese for the topping, but this recipe calls for coconut, which can be toasted Рhence the name "Sawdust Salad". I will have to do a bake-off one day and post the results!

Ingredients

First Layer

  • 1 lemon Jell-O 3 ounces
  • 1 orange Jell-O 3 ounces
  • 2 cups hot water
  • 1/2 cup cold water
  • 1 large can crushed pineapple
  • 1 small package miniature marshmallows
  • {bananas}

Second Layer

  • 1 cup sugar
  • 2 eggs
  • 5 tablespoons flour
  • 2 cup pineapple juice

Third Layer

  • 2 packages Dream Whip
  • 8 ounces cream cheese
  • {1 cup milk}
  • {coconut}

Method

First Layer

  • Make Jell-O; add pineapple – cool – pour into 9-inch by 13-inch pan cover with sliced bananas – sprinkle with marshmallows (colored ones pretty) and congeal.

Second Layer

  • Mix – cook until thick – cool – spread over jello

Third Layer

  • Mix Dream Whip and 1 cup milk – add softened cream cheese.
  • Spread over the second layer and sprinkle with coconut.
