Sawdust Salad
A classic Southern vintage congealed salad recipe, that be used as either a sweet side salad or a light dessert for a heavy meal. This recipe calls for lemon and orange Jell-O, but you could use almost any citrus flavor. Other recipes use grated cheese for the topping, but this recipe calls for coconut, which can be toasted – hence the name "Sawdust Salad". I will have to do a bake-off one day and post the results!

Ingredients
First Layer
- 1 lemon Jell-O 3 ounces
- 1 orange Jell-O 3 ounces
- 2 cups hot water
- 1/2 cup cold water
- 1 large can crushed pineapple
- 1 small package miniature marshmallows
- {bananas}
Second Layer
- 1 cup sugar
- 2 eggs
- 5 tablespoons flour
- 2 cup pineapple juice
Third Layer
- 2 packages Dream Whip
- 8 ounces cream cheese
- {1 cup milk}
- {coconut}
Method
First Layer
- Make Jell-O; add pineapple – cool – pour into 9-inch by 13-inch pan cover with sliced bananas – sprinkle with marshmallows (colored ones pretty) and congeal.
Second Layer
- Mix – cook until thick – cool – spread over jello
Third Layer
- Mix Dream Whip and 1 cup milk – add softened cream cheese.
- Spread over the second layer and sprinkle with coconut.
