Fluffy Coconut Frosting

Ingredients
- 2 Egg Whites
- 1.5 cups Sugar
- 1 tsp Corn syrup or
- 1/4 tsp Cream of tartar
- 1/3 cup Cold water
- 1/8 tsp salt
- 1 tsp Vanilla
- 1.5 cups Coconut
Method
- Place all ingredients, except vanilla and coconut in the top of a double boiler and mix well.2 Egg Whites, 1.5 cups Sugar, 1 tsp Corn syrup, 1/3 cup Cold water, 1/8 tsp salt
- Place over boiling water and beat constantly for about seven minutes, or until mixture will hold a peak.
- Remove from hot water, add vanilla, and continue beating util cool and thick enough to spread.1 tsp Vanilla
- Spread between layers and on top and sides of cake.
- Sprinkle with coconut.
- Makes enough for a two layer, 8-inch cake.

1 1/2 cups sugar
1 teaspoon corn syrup or 1/4 teaspoon cream of tartar
1/3 cup cold water
1/8 teaspoon salt
1 teaspoon vanilla
Coconut (about 1 1/2 cups)
Method
Place all ingredients except vanilla and coconut in the top of a double boiler and mix well. Place over boiling water and beat constantly for about 7 minutes, or until mixture will hold a peak. Remove from hot water, add vanilla, and continue beating until cool and thick enough to spread. Spread between layers and on top and sides of cake. Sprinkle with coconut.
Enough for a two layer 8-inch cake.
