Ingredients

  • 1 pkg Jell-O Mixed fruit, strawberry, lemon or orange-pineapple gelatin.
  • dash salt
  • 1 cup boiling water
  • 1 can pineapple tidbits, drain & save juice 8 3/4 ounce can
  • 1/4 cup lemon juice
  • 1/3 cup mayonnaise
  • 1 cup whipping cream (or use 2 cups sour cream)
  • 1 medium banana
  • 1/2 cup seeded halved grapes
  • 1/4 cup diced marachino cherries
  • 1/4 cup chopped nuts

Method

  • Dissolve gelatin and salt in boiling water.
  • Drain pineapple, reserving syrup; add water to make 1/2 cup if necessary.
  • Stir into gelatin, add lemon juice.
  • Blend in mayonnaise.
  • Chill until very thick.
  • Whip cream into gelatin.
  • Pour into freezing trays or a 9x5x3-inch loaf pan.
  • Freeze until firm - at least three hours.
  • To serve, cut in squares or slices.
