Frozen Fruit Salad
Ingredients
- 1 pkg Jell-O Mixed fruit, strawberry, lemon or orange-pineapple gelatin.
- dash salt
- 1 cup boiling water
- 1 can pineapple tidbits, drain & save juice 8 3/4 ounce can
- 1/4 cup lemon juice
- 1/3 cup mayonnaise
- 1 cup whipping cream (or use 2 cups sour cream)
- 1 medium banana
- 1/2 cup seeded halved grapes
- 1/4 cup diced marachino cherries
- 1/4 cup chopped nuts
Method
- Dissolve gelatin and salt in boiling water.
- Drain pineapple, reserving syrup; add water to make 1/2 cup if necessary.
- Stir into gelatin, add lemon juice.
- Blend in mayonnaise.
- Chill until very thick.
- Whip cream into gelatin.
- Pour into freezing trays or a 9x5x3-inch loaf pan.
- Freeze until firm - at least three hours.
- To serve, cut in squares or slices.
